SIBERIAN STEUR
The Siberian sturgeon or Acipenser Baerii originates from Lake Baikal, near Irkutsk Oblast (Siberia, Russia). Lake Baikal is considered the oldest and largest freshwater lake in the world, about 25 million years old and known for its exceptionally clean waters.
RUSSIAN STEUR
The Russian sturgeon, also known as Acipenser gueldenstaedtii, the diamond sturgeon or the Danube sturgeon. This species originates from the Caspian Sea, the Black Sea and the Azov Sea. This medium-sized sturgeon normally weighs between 20 to 60 kg but can in some cases weigh up to 100 kg and grow up to 200 cm. This sturgeon reaches maturity at about 11 years of age, but can live up to eighty years.
