Cod fillet with spinach cream sauce

  • 4 pieces of 150 gram cod fillet
  • 400 grams of frozen spinach
  • 2 tbsp flour
  • 1 tsp curry powder
  • 4 tbsp olive oil
  • 3 tbsp creme fraiche
  • 4 tbsp grated Parmesan cheese
  • 2 tbsp sliced almonds
  • salt and freshly ground pepper

Preparation method

Boil the spinach for about 10 minutes. Mix the flour with the curry powder and toss the fish in it. Heat the oil and fry the fish for about 10 minutes until golden brown and done. Add salt and pepper. Drain the spinach. Stir in 2 tbsp grated Parmesan cheese and the crème fraîche. Spoon the spinach onto a flat dish, place the fish on top and sprinkle with the rest of the grated cheese and the sliced almonds. Gratin the dish under the grill.
