Zander fillet from the oven
INGREDIENTS
- 4 pieces of Zander fillet of 150 grams
- 1 red pepper in pieces
- 1 leek in rings
- olive oil
- salt and freshly ground pepper
- 1 clove of garlic pressed
- 250 ml fish stock
- 1 glass of white wine

Preparation method
Sprinkle pike-perch fillets with salt and pepper and brush with the crushed garlic. Brush the oven dish with olive oil. Place pike-perch fillets skin side down in the dish and sprinkle with the finely chopped leek and bell pepper. 10 minutes to 15 minutes in a preheated oven at 200 degrees. For the sauce: Reduce the fish stock and the white wine for 2/3. Remove from the heat and stir in the knob of hard butter while stirring. Do not let the sauce boil anymore. Pour the sauce over the Zander fillets and enjoy!
