Sea bass in salt crust

  • 2 x 4 to 6 ounces of sea bass cleaned
  • 1 piece of lemon cut into slices

  • 2 kilos of coarse sea salt
  • 2 pieces of egg whites

Preparation method

Fill the cavity of the sea bass with herbs and vegetables of your choice. In a large bowl, mix the salt with the (unbeaten) egg white. It will be a nice light dough of salt. Cover the fish completely with it. Bake the fish in the salt dough for about 25 minutes. In an oven preheated to 180 degrees. Serve the fish from the salt. Gently tap the crust with a hammer, then wipe off any salt well. If the fish has been in the oven for too long, the salt will become very hard and you will even have to eat it to free the fish.
