Monkfish packages
INGREDIENTS
- 4 x 150 grams of monkfish fillet
- 3 tbsp salad oil
- salt and freshly ground pepper
- 2 leeks
- 1 red pepper
- 4 slices of bacon
- 1 clove of garlic
- 4 tbsp concentrated orange juice
- 4 tbsp coconut milk

Preparation method
Tear off 4 aluminum sheets of aluminum foil from aluminum foil and grease them with a little oil. Cut the leeks into small rings and the bell pepper into pieces. Heat the rest of the salad oil, fry the slices of bacon in this and take them out of the pan. Add the pepper pieces to the pan and fry them for 3 minutes on high heat. Add the leek rings and the crushed garlic clove to the pan and fry them for 2 minutes. Add a pinch of salt, pepper, the orange juice and the coconut milk to the pan. Bring to the boil and let it boil for 2 minutes. Rinse the monkfish fillets under the cold tap and pat them dry. Spoon a quarter of the leek mixture into the center of each sheet of aluminum foil. Place the monkfish pieces on top with the slices of fried bacon on top. Close the packages loosely. Let the fish cook in the middle of the oven for about 20 minutes.
